Everyone at Cool It Heating and Air Conditioning wishes you a very happy President’s Day! We hope you all get a chance to take advantage of some of the great sales! It is also a great time to think about how you can make your community a better place. Lend a neighbor a helping hand or volunteer your time; everyone doing a little good can make a big difference!  Being more green is also a good way to help you community, and upgrading your HVAC system can be a big part of that. If you have an older system that is using a lot of fuel, a new system will not only save you money but also help you make your home more environmentally friendly, which is good for everyone.

One of the traditions of celebrating Presidents Day is food made with cherries, in honor of George Washington, so here is a great recipe for some Cherry-Blueberry Pie:

“A fruity and fun surprise awaits you inside this double crusted cherry and blueberry pie.”

INGREDIENTS:

1 (15 ounce) package refrigerated pie

crusts

1/2 cup white sugar

2 tablespoons cornstarch

1/4 teaspoon ground cinnamon

1 (21 ounce) can cherry pie filling

1 1/2 cups frozen blueberries

1 egg white

1 teaspoon water

2 teaspoons sugar

DIRECTIONS:

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Press one of the pie crusts into a 9 inch pie plate. In a large bowl, stir together 1/2 cup of sugar, cornstarch and cinnamon. Stir in the cherry pie filling and blueberries. Spoon into the pie crust. Top with the second crust, and press the edges to seal. Flute edges, or press with the tines of a fork. In a cup, whisk together the egg white and water with a fork. Brush over the top of the pie, then sprinkle with 2 teaspoons of sugar.
  3. Bake for 45 to 55 minutes in the preheated oven, or until crust is golden brown. Cover the edges of the crust with aluminum foil if they appear to be getting too dark. Cool for at least 2 hours to allow the filling to set before serving.

“Warm, soft and gooey chocolate cakes. Perfect for that ubiquitous chocolate fix. A good-quality bittersweet chocolate is necessary for the success of these cakes.”

INGREDIENTS:

1/2 cup butter

4 (1 ounce) squares bittersweet

chocolate

2 eggs

2 egg yolks

1/4 cup white sugar

2 teaspoons all-purpose flour

DIRECTIONS:

  1. Preheat oven to 450 degrees F (230 degrees C). Butter and flour four 4 ounce ramekins or custard cups.
  2. In the top half of a double boiler set over simmering water, heat the butter and the chocolate until chocolate is almost completely melted.
  3. Beat the eggs, egg yolks and sugar together until light colored and thick.
  4. Beat together the melted chocolate and butter. While beating, slowly pour the chocolate mixture into the egg mixture, then quickly beat in the flour and mix until just combined.
  5. Divide the batter between the four molds and bake at 450 degrees F (230 degrees C) for 6 to 7 minutes. The centers of the cakes will still be quite soft. Invert cakes on serving plates and let sit for about 15 seconds, then unmold. Serve immediately with fresh whipped cream, if desired.

Here is a recipe for Peanut Butter Cup Cookies to make your Christmas a little sweeter:

Peanut Butter Cup Cookies

“These cookies have a sweet peanut butter cup center.”

INGREDIENTS:

1 3/4 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon baking soda

1/2 cup butter, softened

1/2 cup white sugar

1/2 cup peanut butter

1/2 cup packed brown sugar

1 egg, beaten

1 teaspoon vanilla extract

2 tablespoons milk

40 miniature chocolate covered peanut

butter cups, unwrapped

DIRECTIONS:

  1. Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.
  2. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.
  3. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Here is a great recipe for Vegetable and Feta Latkes that will make your Hanukkah even better:

Vegetable and Feta Latkes

“Try this colorful take on traditional potato pancakes. Stir shredded zucchini, potatoes and carrots into a batter of eggs, matzo meal, parsley and feta cheese. Fry until golden brown. You’ll love the creamy bite of feta with the tender veggie crunch.”

INGREDIENTS:

2 1/2 cups grated zucchini

1 cup peeled and shredded potatoes

1 cup shredded carrots

1/2 teaspoon salt

3 eggs, lightly beaten

salt to taste

freshly ground black pepper

3/4 cup matzo meal

1/2 cup chopped fresh parsley

1/2 cup crumbled feta cheese

1/4 cup vegetable oil

DIRECTIONS:

  1. Place the zucchini, potato and carrots in a colander, place paper towels or a cheesecloth over the top and squeeze out as much moisture as possible. Sprinkle salt over the vegetables and let them drain for 15 minutes. Squeeze vegetable again in paper towels.
  2. In a large mixing bowl combine eggs, vegetables, salt and pepper. Mix well. Stir in matzo meal or flour, parsley and feta.
  3. Heat vegetable oil in a large frying pan. Place vegetable mixture, formed into pancake sized cakes in hot oil and fry until golden brown on both sides. (Cook two to three minutes per side). Add more oil as needed to keep cakes frying up well. Drain fried latkes on paper towels.

Happy Thanksgiving!  We have a lot to be thankful for this year, especially all of our great customers! Have a very happy holiday with your family, friends, and loved ones. And don’t forget that Thanksgiving is also about amazing food; here is a recipe from allrecipes.com for some Sugar Coated Pecans that will add a little something extra to your day:

Sugar Coated Pecans

“These slow-roasted whole pecans coated in an egg white and sugar glaze spiced with cinnamon make a wonderful snack for any occasion.”

INGREDIENTS:

  • 1 egg white
  • 1 tablespoon water
  • 1 pound pecan halves
  • 1 cup white sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

DIRECTIONS:

  1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
  2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
  3. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
  4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.
